Quarterback Snacks

Football season is in full swing now. That means millions of people will be getting together every Sunday to socialize.  Food and drink go hand in hand with sporting celebrations. Most options are delicious but also unhealthy. I try to have healthy options on hand and I would love to share a few of my favorite recipes here. Please note I am gluten free so all my recipes will be gluten free.

Cauliflower Buffalo Bites

1 small head of cauliflower chopped

½ cup gluten free Bisquick

½ cup milk

1 egg white

1 tsp. each of garlic powder, onion powder, salt, and pepper

1 tbs. grassfed butter

3 tbs. Franks Red Hot Sauce

Preheat oven to 425F. Combine Bisquick, milk, egg white, and spices in a bowl. Toss cauliflower with mixture until coated. Spread on a sheet pan sprayed with nonstick spray. Bake until golden brown (20-30 min). Melt butter and combine with Franks sauce. Toss baked cauliflower with sauce. Serve with your favorite creamy low-fat dressing.

Homemade Garlic Hummus (no tahini)

1 can chickpeas

¼ cup extra virgin olive oil

2 cloves fresh chopped garlic

1 tsp. each salt and pepper

Combine all ingredients together in a food processor until smooth. Serve with veggie sticks.  You can play with it and add lemon zest, herbs, etc. to make it your own flavor.

Other great snack ideas include chips and salsa, low salt roasted nuts, fruit with yogurt dip, and low fat spinach and artichoke dip.

I like to have a couple of alcoholic beverages with the game. I hate beer so I usually have white wine. I just limit my intake so I don’t take in too many empty calories.  There are new seltzer waters that are diet friendly but they taste too much like fruity beer too me but I am sure they are a hit with a lot of people.

If you have any favorite healthy game recipes, feel free to share them. I would love to hear what you offer up! Touch down!
